The Art of Slow Dough: Why Artisan Bread Is Making a Comeback

Good bread requires patience.

And in 2026, people have become patient enough to indulge.

Artisan baking is not only about good bread but also the whole process involved. The slow-fermentation process makes bread richer in taste, texture, and even digestibility.

However, there is another factor at play here.

When things move quickly around you, anything that moves slowly becomes even more meaningful.

The trend in baking suggests that although regular items remain simple, high-end ones are increasingly sophisticated (blog.bakestreet.co).

It is no wonder then that artisanal bread is popular now.

This is because, when things take time...

They are worth it.

Commute is 55 minutes on the train each way so I print a stack of hard sudoku puzzles on Sunday nights and knock one out per ride.

The evil difficulty is actually evil, one took me three days to finish, which has not happened since my old Puzzle Baron subscription lapsed.
